Since I'm originally from the Chicago area, everyone is "Irish" there on St. Pat's Day, I'm making Colcannon, a delicious dish containing mashed potatoes, bacon, cabbage and onions. yum! how do you make your colcannon? I use a recipe from allrecipes, its called Diane's colcannon. I fry the bacon, set it aside but keep the bacon grease in the pan and saute' the onions and cabbage - in the meantime the potatoes are boiling, I mash the potatoes with milk then I mix in the onions, cabbage and crumble the bacon in the whole mess and add butter. I don't have the recipe in front of me so I don't have the measurements. Its very easy to make , it would have to be for me to make it.
