I bought a smallish brisket, and was going to "corn" it, myself, as an adventure. There are instruction videos online, and I liked the one from America's Test Kitchen, which calls for an easy brining system, that takes 6 days.
The day that I should have started the process was the first day after my initial Covid shot. I didn't have a terrible reaction, but I lost interest in "corning" beef. I still want to try it, later.
I bought a small already corned one. And, I'll go pretty traditional, with potatoes/cabbage.
