I don’t think Orson Welles ever said that the role was “beneath him.” Besides, Welles didn’t exactly have the most prestigious career. He famously did all kinds of commercial roles for a quick paycheck. People knew who he was, but his movies rarely did well financially. Anyway, I did some digging and a friend of Orson Welles had this to say in a Reddit AMA. Edit: I did some further digging and found this article. It's odd how some are saying that he "hated" playing Unicron... That quote above, sounds like he wasn't a Fan of the Transformers, but it doesn't sound like he hated the role... In a documentary for the film, Cast and Crew said that he enjoyed being able to play a giant "Planet"... In a way, it stroked his ego... It's hard not to like that. Not sure what to believe... But I'll believe cast and crew who worked with him on the film, over some random posters on the internet saying, he "Hated" the role, since they haven't been able to provide a source for that claim.
