Hi darling Sunshine,
We are all well here and have been lucky with Covid. Our second daughter is moving back home from France in November and we are doing renos to accomodate the family of four ( daughter husband and two daughters 9 and 12) Can't wait. The Spinakopita is not high carb as filo pastry is very thin and the rest is cheeses, feta and cheddar and eggs and spinach. It is really easy and I highly recommend it. Love Goz
