Try making them with large chocolate chip cookies. Get the pints, i.e. Ben & Jerry's or Hagen Daze and just slice the carton. I saw it on TV the other day on my antennae TV, some Russian guy is always doing crazy experiments, don't know the name of the show but its usually fun to watch. that's what i did with the chocolate chip cookies.  had to chill them so they would hold the ice cream. too soft otherwise.
