Kubrick, but it doesn't get much tougher than this. The deciding factor might just be that Hitchcock has more forgotten movies than Kubrick's entire catalogue. Even the quality over quantity argument is tough because Hitchcock has as many solid winners as Kubrick, but Kubrick took his films to different worlds and new heights. It'll be 50 years soon and it still doesn't get much better than 2001: A Space Odyssey.
He's got a small catalogue with big diversity. Kubrick's movies have almost no dry spots. It took him a while, like Tarkovsky, but Kubrick cranked out total package after total package. They're almost all perfect fusions of far reaching concepts that also bring the entertainment.
If you're a Hitchcock type of dude, though, then there's no one but Hitchcock to hit that spot. His films could be their own genre.
