Space Mountain. That ride used to scare the crap out of me when I was a kid. I was so worried about riding a roller coaster in the dark that I begged my father to skip it. He did, though, I mustered up the courage later on in life and actually thoroughly enjoyed it.
Splash Mountain is another one. It's a nice way to cool off on a hot summer's day. It's a Small World is also a goodie just for the song itself.
I know this isn't necessarily a ride (unless you count the revolving stadium), but I like the Carousel of Progress. It was interesting to see Walt Disney's version of the future.
