I'm Catholic, so I'm not really the directed audience for this question, but I'd guess that, if God's existence were scientifically proved, most atheists and agnostics would just move to deism. I figured as much. But this is just a hypothetical. I guess, in other words... Which religion would you choose if you HAD to choose one. If I understand what you mean (correct me if I'm wrong), you're asking for a specific organized system of religion? Because I suppose deism could be (arguably) called a religion--certainly a system of belief. At first, then, I was going to go with Unitarian Universalism, of whose churches we have a plethora here in Boston (the faith's American birthplace, after all); each denomination (Unitarianism and Universalism) used to be Christian, but now they take in anyone, regardless of belief (or lack thereof). Politics may be an issue, though, as they tend to lean very much towards the left, and anyone who thinks contrariwise may not be welcomed. The other possibility, though, may well be the Baha'i Faith, in which I have some academic interest. Baha'is believe that nearly all founders of world religion--Abraham, the Buddha, Jesus, Muhammad, etc.--were "manifestations of God," and work for world peace and inter-religious dialogue and co-operation.
