The two times I visited the Pacific Northwest, I had the best salmon I've ever had in my life. Specifically, at this sushi place in Seattle, I had a sashimi sampler platter that had both Coho and King, oh man was it incredible. I was in Vancouver a few months ago and had Sockeye Salmon sashimi that was just out of this world amazing. I ordered a second plate of it even though I was no longer hungry, just figured it would be years before I was back there. It's incredible how varied salmon can be and how amazing it can be in the right place in the world.
