I won't include events that were in my lifetime but where I was too young to appreciate their bigness, such as Titanic and Star Wars: Episode I - The Phantom Menace.
It would probably be these 5.
HM The Hobbit: An Unexpected Journey I had already chosen my top 5 when I accidentally left one out, and I couldn't possibly remove this one. It was the first Middle Earth movie since The Return of the King. Definitely a lot of excitement for this. Especially after the very long wait, and the whole 48fps thing.
5 The Dark Knight Rises By far the biggest and most epic superhero movie event in my lifetime. I saw it three times in cinemas.
4 The Lord of the Rings: The Return of the King Now I think this one is easily the best film out of all the ones I will mention here. And if I were a bit older when it was released I would have appreciated it more and it could have gotten my #1 spot. But I didn't truly appreciate all of it's greatness until I rewatched the trilogy on DVD years later, when all 3 of them became my top 3 greatest films of all time. But I was old enough to remember it being a very big deal, and I remember the crowds, so there's no doubt it needs a spot on the top 5.
3 Avatar This movie was absolutely massive. It was more successful than my #1 and #2 choices below. But while those mainly only appealed to the pre-existing fanbases, somehow this movie got literally everyone's interest. Everyone went to see it, except of course for my boring family members who for some reason never seem interested in anything good. I think I saw this one twice in cinemas.
2 Harry Potter and the Deathly Hallows: Part 2 This one was massive on a personal level, because after growing up with the characters over like 8 films and 11 years, this was the final conclusion to this epic series. I saw it three times in cinemas.
1 Star Wars: Episode III - Revenge of the Sith By far the most exciting, hyped up movie event in my life. This movie was a HUGE event. Almost everyone I knew except old people or boring family members went to see it. Merchandise, games and toys were EVERYWHERE. People were talking about it for months and months and watching it multiple times at the cinema. I saw it three times in cinemas. This is what true "hype" felt like, not the artificial hype we see now every few months for all the MCU/New Star Wars movies which is fueled mainly by social media and nostalgia, not actual pure excitement and interest like this was. People who truly believe these new ones garner as much excitement as this are totally kidding themselves. Including you, OP.

2. The Force Awakens. Again, -new- SW amps the hype metre, esp when we were never expecting more new SW ever again. Watched this 8am opening day, again skipping prime showings the night prior. Having popcorn at 9am was weird. 9/10 hype We can not deny the huge hype for The Force Awakens. Even I contributed towards it. But you've got to understand, it was different this time and not a true representation of "hype". Like you said, it was the first Star Wars movie we got after never expecting to ever get one again. But that was it. We were excited because it was continuation of Star Wars. Because it had the name. There wasn't much in the trailers to be legitimately excited for. Whereas with Revenge of the Sith we were excited because we really wanted to see what was IN the film. We were invested in the story. We wanted to know what would happen. We didn't just rush to the cinemas because of the brand name, or because social media told us to. So it may have gotten asses on seats, and made lots of money, but it was not a particularly memorable event. Don't worry, I got duped too and I still feel bad about it.

Jaws and Star Wars were worldwide cultural phenomenon's. Nothing since has even been close.
For me personally, a babysitter took me to see "Wait Until Dark" when I was way too young to see such an intense movie and it seriously scared the bejebus out of me - I will never forget it.
Now of course, it's kinda lame. But for a kid who had never seen a really scary movie before - damn! - I couldn't sleep for a week. Up till then the only stuff I saw at the movies was Disney, Mary Poppins and The Sound of Music type fluff. So for me it was very eventful, like your first roller coaster ride.
