Can anyone here offer a suggestion on how to keep brown sugar malleable after opening the package? I usually use brown sugar sparingly on hot cereal but find that after opening the package, it turns into a solid rock like granite chunk in a matter of days....
I end up throwing it away because it is impossible to deal with...help !!!!

I have two suggestions. In my country if you pay a little more, you can get a thing called 'soft brown sugar'. Also if you put it in an airtight container to exclude moisture and humidity.. You can also buy little disposable dessicant satchels to put in with it. Wait...that's three!

I keep mine in a "Zip" bag, in the freezer. It never freezes solid, but remains soft, and easy to work with. And, as Goz said any airtight container will should do the trick.
The dessicants that I have seen are little discs of terra-cotta. I don't know if they are specially treated, or if any piece from a flower pot would work.
I've also heard of popping it in the microwave to soften. But, once that waxed-paper inside the box is broken, and the sugar becomes a brick, you'd have to heat the whole thing. So, I don't know how successful that would be.
Before I started keeping mine in the freezer, I wished that they would sell it in cubes or some individual units (of 1 Tbs.), like they do teaspoons of regular sugar. But, the added processing, and packaging needs might drive up the cost. Brown sugar is moist, and each cube would probably have to be individually wrapped.

...thanks all for the suggestions. I hesitated at using an airtight container at the thought of eventually throwing the container away with the solid brown sugar inside not knowing how the sugar reaction would be. I will definitely try the "freezer" method...

yes. Ziploc bag it throw it in the fridge. also: go to bed bath and beyond [they definitely have it] or a kitchen kitsch store and pick up a brown sugar bear.

Little late on replying, koskiewicz BUT I have a small bear shaped pottery thingy that gets soaked in water and then put in the plastic container I have the sugar in . A glass jar would work as well. I forget where I got it, but I imagine that it is generally available. It works great and even restored a box of brown sugar I could have used as a door stop. It was completely solid and shaped liek a brick ! Before I got the bear, I used a piece of a broken clay pot .. well washed or new ! You might try a piece of apple in the container BUT you have to change that periodically. The bear you just resoak when the sugar seems to be drying out a little. Have used the freezer method as well.. but the bear works and is cute !
IF you drink coffee... brown sugar is good in that !
