Why not just jump to the 25 or 25th Century?

The TOS was in the 23rd Century, while TNG, DS9 and Voyager were in the 24th Century.
Then they went to the 22nd Century with Enterprise. The films went to the 23rd Century again and so did Discovery.
What I don’t understand is why not simply jump to the 25th or 26th Century? Create new characters and more interesting technology and space adventures in other areas? That way you can avoid any canon contradictions too.
