Everything from war films, suspense dramas, aviation construction, etc. Films devoted to the topic entirely or that only have memorable sequences involving it. On the ground or in the air.
A few of my favorites (some great, some I just like):
The Best Years of Our Lives (1946) - soldiers flying home & the plane graveyard scene
Apocalypse Now (1979) - the amazing aerial war sequence accompanied by Wagner's "Ride of the Valkyries"
Swing Shift Maisie (1943)
out of so many more. . .

The Great Waldo Pepper looks at barnstorming after WW1. Redford plays a hotshot pilot who just missed the war.
The Blue Max involves a social climber making his way in the aristocratic German air force of WW1. Some of the finest aerial footage ever made.

I loved The High and the Mighty, when I first saw it. A re-viewing, just a few years ago, was a little disappointing, though.

This nifty little 1936 espionage thriller involving secret aircraft plans provides a great showcase for Peter Lorre's versatility early in his U.S. career, as well as an unexpected and poignant denouement unusual for the genre and period. Lorre with J. Carrol Naish, unmentioned in the poster art but always an asset to any film. With Thomas Beck, Ralph Morgan and Brian Donlevy.

I suspect that Coppola and Milius saw this wartime newsreel: I remember seeing this short doc before, bravo, but completely forgot about it. I have a feeling that you are right. Milius is obsessed with militaria and I suspect he brought it to Coppola's attention. Milius, by the by, was the Coen Brothers' inspiration for the Walter character in The Big Lebowski.

The Tarnished Angels (1957) Douglas Sirk... Former World War I flying ace Roger Shumann (Robert Stack) lives following air shows during the Great Depression. Shumann makes appearances as a barnstorming pilot at rural air-shows with his parachutist wife LaVerne (Dorothy Malone) , son Jack (Chris Olsen) and devoted mechanic Jiggs (Jack Carson) . New Orleans reporter Burke Devlin (Rock Hudson) covering an event is intrigued by the gypsy-like lifestyle of the former war hero ... The melodramatic aviation classic is based on Pylon a novel by the American author William Faulkner, published in 1935. Barnstorming was a form of entertainment popular in the 20s & 30s, in which stunt pilots performed tricks, either individually or in groups called flying circuses, thrilling audiences with their skill & daredevil feats.

The Night My Number Came Up (1955) A superior British supernatural aviation drama, the film is is based on a real life occurrence, a paranormal phenomena. Air Marshal Sir Victor Goddard claimed to have witnessed a clairvoyant incident in 1946, he published his experience in The Saturday Evening Post of 26 May 1951 the basis for this thrilling film.
