I like Steve Martin a lot but I have never been a big fan of his comedies. He is funny, but the stories of most of his movies don't do much for me.
Bowfinger is my favorite Steve Martin comedy.

It's hard for me to choose his absolute best, but I would say the following films best define his talent:
Planes, Trains and Automobiles
Dirty Rotten Scoundrels
Roxanne The Man With Two Brains LA Story Bowfinger Dead Men Don't Wear Plaid
I haven't seen Parenthood, All of Me, Father of the Bride and a few others.
