Probably my favorite of all the greens, naturally sweet and when you saute em with some onion in a balsamic-white wine reduction, it goes marvelously with roasted whole beets. Mmmmmmm. I love kale, I can't help it. Baby kale in particular.

I don't really care for most kales, but I do like lacinato/dinosaur kale when it's dark, crisp, and fresh.

Kale is extremely nutritious. Very high in vitamin C, folic acid and antioxidants. Too bad it tastes like grass and is so hard to chew. I still know how to make it delicious. Put it in a blender with some banana, avocado and apple juice. A wonderful and very satisfying meal.

You can also try baby kale, which is much softer and easier to eat.
