On a flat surface or on the edge of something? I've heard pros and cons for both ways. I tend to get egg shell no matter what I do, but at least I catch it!

Usually on the edge of my stainless steel sink. same here,holding whatever pan or bowl nearby with hot water running so i can dispose of shells and rinse my hands easily

I crack the egg slightly on the edge of my kitchen sink.
I then pry it open a bit and let the sludge ooze out of the separated egg shell.
I then discard the shell husk.
I usually get no shell shards in the "egg batter"

On the edge of the pan. I've been eating four eggs a day for breakfast for years now, so I'm an expert at cracking them. It's all practice.

Raw: I do it "just like Jacques." You reduce the chance of the yolk breaking, if you crack the egg on a flat surface. As he said, breaking the shell on a sharp edge drives shards of the shell into the egg, and those shards will often break the yolk. If I'm going to mix the eggs, it doesn't matter.
Soft boiled: I use the edge of a regular spoon, and scoop out the egg.
Hard boiled: I tap it, ends first, all over the egg so that it has a fine "network" of cracks, then peel it under cold water. If I'm doing a lot of them, for deviled eggs, I crack them all over, then put them in cold water. After the water seeps through the cracks, you can just gently squeeze them, and the shell pops right off.

On the edge of something lightly so that with any luck I can insert my thumbnail into the slight crack and pull apart cleanly without too many eggshell bits.
For hard boiled, I tap all over the egg on a hard surface and the roll it. Crack and roll baby!
