I voted for Batman Returns, Ed Wood, and Sleepy Hollow.
I can explain my choices in greater detail at a later date (if anyone wants me to do so, that is), but suffice it to say that I find these Burton's clearest and maturest realizations of his directorial vision.

Batman Returns (1992)
that's the only Tim Burton movie i still give a Thumbs Up to (at least as of my most recent re-watch which is June 1st 2013). the rest of his movies no longer have any re-watch appeal for me.
p.s. maybe it's just me, but i feel his style is something that has more appeal when your young vs when you get a bit older.
