The Polish military. They were one of the first countries that fought the Nazis.
The Canadian and Australian militaries could use more focus too.
The operations in Africa haven't been focused on much either.

Something else that would be interesting to focus on is the division of the French between the Axis and Allies.

The Ethiopian resistance movement to Italian rule.
Werwolf operatives that may or may not have existed at the end of WW2.

An alternate history where the A-Bomb wasn't dropped and we had to go through with Operation Downfall.
It could either take a stance where the Allied forces were successful or were horribly defeated and we accepted a conditional surrender by the Japanese.
History would be completely changed.

I remember a short story that does something like that, set in 195_. The invasion did not occur, the country was bombed into rubble by conventional means. Eventually there are no more targets. American parents of dead soldiers pay to ride in a bomber and drop their own commemorative bombs.

This. a full invasion of Japan with all its carnage in a 'what if' scenario.

Something that'd be tricky given the POV but morbidly fascinating would be the Nazi archaeological teams like the Ahnenerbe to prove the existence of a prehistoric Aryan superrace. Ernst Schafer's Tibet expedition that uncovered the controversial 'Iron Man' statue as an example. Or the efforts of the closeted homosexual scholar Otto Rahn trying to recover the Holy Grail while trying to avoid closer scrutiny by the SS on account of his sexuality.
