I went in a place that when I left I thought if I ever opened a my own food place it would be like that one. It was called Beer & Dogs I think. The atmosphere was good with music playing. They had all kinds of ice cold Draft beer to pick from. Many different kinds of hotdog buns to choose from and a ton of different toppings. They had a sign up saying All Dogs all Beef. I liked that because that is all I buy in the stores. The place was pretty packed and I can see why. Great hot dogs and ice cold Draft beer in a fun atmosphere. That's the kind of restaurant I would like to open.

Sorry, I didn't mean to hit "like," to your post. I see nothing pretentious about an establishment that focuses on French and Italian wines, and cheeses. They're lovely, and cover a wide spectrum of flavors, bodies and textures.

Back in the 80's, I used to go to a Japanese steak house in Highland, Indiana (right outside Chicago) called Kobe's, it served the famous Kobe steaks and they were cooked at your table. It was delicious and I'm not a steak eater.

I'd open a pub but it'd be like if you were a hobbit and going to a place for the "big folk." So you'd have huge steins of beer, giant turkey legs, huge platters of vegetables, basically everything would be over-sized. Like a family style pub.

My restaurant would serve my grandma's recipes, including her chicken and dumplings, various side dishes and a wide selection of desserts. She had the best Sunday dinners.

I would love to run a small Fish & Chips place, with a limited selection of items on the menu. I'd concentrate on quality over variety. So I'd limit it to just really good batches of crispy, deep-fried fish and chips, lemon wedge, cole slaw as an optional side dish. Order options would be simple: small, medium or large. I'd have really good tartar sauce and ketchup, plus salt and vinegar, and minimal beverages (water, coffee, ice tea, Coke and Sprite). I like those kind of places, where you know what to get and it's simple and fast. Those places make a lot of money money.

I would open a restaurant, without it being vegetarian, but where there was MUCH more emphasis on vegetables.
It would work that you order you protein of choice, whether it be meat of some variety, fish, seafood beans tofu or pulses etc in the quantity that you wanted, then there would be a smorgasbord of vegetable dishes and salads of all kinds especially those in season from which to chose to accent your meal. There would also be a huge variety of sauces, so that it becomes a make your own meal and ethnicity happening thing.
e.g. If you order a large steak you might have a jacket potato a green or salad with gravy or Dianne sauce or mustard, or baked vegetables.
If you order chicken you might have rice and Asian vegtables sweet and sour or different Asian sauces.
You might order mince or chili and either make spaghetti Bolognese or Mexican.
If you had fish you could have it Asian style,bechemel bΓ©arnaise etc etc etc.
If you had pork you could have it with baked veges and apple sauce or gravy or add it to sweet and sour sauce or Thai salad greens etc. It would need to be a large restaurant for economies of scale butt need not be too expensive as the wait staff jobs would be light as it becomes serve yourself. Something for everyone and the antithesis to where you get a slab of protein you don't want and either a few wilted veges or worse a drizzle of some jus or some other nonsense.
I am all for well cooked food with fresh ingredients and a balanced diet even if you are out to eat at a special event.
