At this stage of the game, are they getting into hit and miss territory?

Even lesser Coen movies are better than 99% of what passes for entertainment from Hollywood these days.

Well, I liked Hail Caesar! better than most. But Suburbicon was bad and I didn't much care for Bridge of Spies;I know they didn't direct but they still wrote both films. Back to your question, maybe?

Their filmography has always gone up and down. Last decade saw their worst movie, The Ladykillers, followed by arguably their best, No Country For Old Men, followed by the meh Burn After Reading.
I'd actually say they're on a streak right now. I've liked everything since A Serious Man. (Only counting things they've directed)

The Coens have always been a mixed bag for me, but when they're good they're brilliant.
