It's because despite the scope being so grand at it's core it's really about family.
We start off with A New Hope seeming generic enough. Just a fun little film about a hero going up against an evil empire because some dark lord killed his father. Then with the Empire Strikes Back we find out that this dark lord far from killing his father actually IS his father. So we go back and watch the Phantom Menace and are amazed to see what the Star Wars universe looked like at a time of relative peace. This is accentuated by the greenery and water in scenes giving the impression that this was more a time of life. Even Darth Vader is a happy go lucky kid. By Attack Of The Clones this icon of evil represented by Darth Vader is ironically a handsome hero in Anakin Skywalker. He makes some poor choices as do the other characters being manipulated by evil until war is declared. With Revenge Of The Sith Anakin's fall from grace mirrors that of Lucifer's in Paradise Lost. He commits genocide ruins his family and becomes maimed as Darth Vader. And finally in Return Of The Jedi it is through Luke's compassion that Vader is able to redeem himself and bring peace.

The Disney Star Wars films were not mentioned because mouse canon is not canon. Anymore than fools gold is real gold.

It's because despite the scope being so grand at it's core it's really about family. Nah, I liked them because the guns went pew pew, it had cool spaceships and monsters and toys. Not because it was a space bound version of Fast & Furious Canon Schmanon. They still piss all over the prequels

Of course the new Star Wars movies are canon. Unless they're coming out with a new episode VII and VIII, the story's moved on.

I love Star Wars IV. I really like Rogue One, & probably Empire.
I think the love for it as a franchise sadly rests in the false hopes the other 7 films would capture that. ROTJ gets a boost for capping a great trilogy. On its own, watched standalone, it's just not the same.

I don't mind when alternate lines of canon(?) are produced like Superman Returns after S2, & Halloween 2018 because I've always despised every Halloween sequel. Those films aren't asking us to delete the past, they're merely being made as retconned canon alternatives, in lieu of completely starting over.

Darth Vader was a weirdo henchman with no backstory, as Plinkett mentioned in his review. He wasn't this Space Jesus, and all that other nonsense about mystical prophecies or midichlorians. The Emperor was just that, an Emperor, he wasn't this Sith Dark Lord. He doesn't even like lightsabers or the Jedi force. This was all written impromptu.
