Great time of the year for soup lovers. I've just had homemade red lentil soup full of onion, garlic and tomato.
There's nothing like a good bowl of soup. Sigh.

That sounds so good.
It's not quite chilly enough, here, to get into full-speed-ahead soup making, but I'm looking forward to it. One of the great things about making soup is that there's zero failure rate. No matter what ingredient you might like ... throw it in! You'll like the soup.

There's nothing like a good bowl of soup. Sigh. This is so good when you come in from outside on a chilly day. Chicken Noodle Soup. Skinny noodles or wide noodles. Either way it is very good. Have any of you ever had a soup called Texas Cowboy Soup? If not you should try it for sure.

I haven't had anything that was specifically called "Texas Cowboy Soup," but the photo is, certainly, inviting. It looks like a soupy version of "chili con carne." It's gotta be good.
As for the chicken soup, you mentioned wide OR skinny noodles. I tend to like the wide ones. There's a certain mouth-feel to wide noodles. Growing up, I remember wide buttered noodles being served with great pot-roast. True "comfort food."

I use up garden produce that might otherwise go to waste by making soups. I always freeze some for the winter. You just can't beat it.

I never cared for Chicken Noodle Soup. I can't make soup but I love thick soups.

Hey WKM - it's really easy to make and you can change the taste by using different types of cheese. I like a mixture of Velveeta and sharp cheddar or just triple cheddar mix. I made it last night using chicken meat and chicken broth instead of beef and that was good too. I add chopped or sliced carrots to mine too. You would probably like it because it's a thick soup. It freezes well too. Here's the recipe....
Ingredients
1 pound ground beef 1 tablespoon vegetable or canola oil 1/2 cup chopped onion 1/4 cup chopped celery 2 tablespoons chopped green bell pepper (I don't use the green pepper) 2 medium potatoes 2 cups, peeled and cubed 1 tablespoon instant beef bouillon granules 1 1/2 cups water 1/2 teaspoon ground black pepper plus more if needed 3 tablespoons all-purpose flour 2 1/2 cups whole milk divided 1 1/2 cups grated sharp Cheddar cheese 6 ounces Salt Additional grated sharp Cheddar cheese for garnish
Instructions
Brown the ground beef in a 3- or 4-quart saucepan, breaking up with a spoon while browning. Once browned, drain beef using a colander or strainer. Add the oil to the saucepan over medium heat. Add the onion, celery, and green pepper. Cook until vegetables have softened and onions are translucent, about 5 minutes. Add the cooked beef, potatoes, bouillon, water, and pepper. Stir to combine. Bring to a simmer, cover, and cook over low heat until potatoes are tender, about 20 minutes. In a small cup, add the flour and pour in 1/2 cup milk. Stir or whisk to combine thoroughly (no lumps). Add milk/flour mixture and remaining milk to the pan. Stir to combine. Cook, stirring occasionally, until thickened and bubbly, about 10 minutes. Add cheese and stir until cheese melts. Taste and adjust seasoning with salt and pepper. Serve hot with additional grated cheese as a garnish if desired.

Oh boy! There was a Polish deli that made homemade soup and sold it by the bowl near me. It unfortunately closed and relocated many miles from my house. I miss that place so much. It was called "Gene's" They had 2 different soups every day, and I tried them all and was never disappointed. Now I am disappointed that they have moved.
