Commentary tracks are always welcome. So are lengthy behind-the scenes documentaries. The documentaries for the extended editions of The Hobbit films is nearly 10 hours per film.
It may or may not count but I liked that in Red Dwarf series VII one of the episodes has the option of being played with unseen footage from the televised version and no laugh track. The no laugh track part is quite interesting.

I can't name a favorite audio commentary, but I did like John Canemaker's audio commentary for Snow White and the Seven Dwarfs. I do need to listen to Roger Ebert's audio commentary for Citizen Kane and Casablanca.
