The Wave is a great one. A German film. High school teacher creates a mock dictatorship to show how easily people could be manipulated to fall in line. Things get out of hand.

"The Face of Another" for example. Das Experiment (2001) comes immediately to mind. Bystander effect is demonstrated quite well in a movie called The Incident (1967) (a movie that I very highly recommend BTW).
Lord of the Flies (novel/movies) depicted some of the things that happened in Robbers Cave Experiment.

There's a few on here I haven't seen... If anyone knows more, especially from the 1930-70s, I'll watch them today -- weather is bad, I'm not leaving the house!

"Tonight you're all gonna be part of a social experiment. Through the magic of diesel fuel and ammonium nitrate, I'm ready right now to blow you all sky high. Anyone attempts to get off their boat, you all die. Each of you has a remote... to blow up the other boat. At midnight, I blow you all up. If, however, one of you presses the button, I'll let that boat live. So, who's it going to be: Harvey Dent's most wanted scumbag collection, or the sweet and innocent civilians? You choose... oh, and you might want to decide quickly, because the people on the other boat might not be so noble."

Just googled those lines ^ I feel asleep to that, but it was also late, and I had a co-worker spending the night.. She actually brought the DVD.

Other than what's been mentioned, I can think of:
The Truman Show The Killing Room The Human Race (underrated IMO) Exam The Circle (not the Emma Watson movie) My Little Eye Would You Rather The Belko Experiment The Hole (2001)

Does A Clockwork Orange fall under this category? I think so.
What about Battle Royale (2000)?

I would also count the Matrix although it's Reloaded that explains why.

Glad to see some love for "Cube" and "Would You Rather?" among others. "Cube" was lightning in a jar. Very clever film, done on a modest budget. Lots of good work being done by the cast and crew. Wish I could say the same for the sequels.
"Would You Rather?" is a treat for horror fans in that you get Jeffrey Combs (Dr. West from "Re-Animator") chewing the scenery for nearly the entire running time. This was a surprise treat in a sea of mediocre direct-to-streaming horror movies of the last 5 years.
I'll also add "The Purge" films. The horror is 'meh' for me, but I really enjoyed the segments of 'the experiment' being discussed on news shows and at kitchen tables. I'd have taken a double on those segments in exchange for seeing so many people get unceremoniously shot.
