They are both satrical comedies of a genre.
Shrek was a satire on the Disney Renaissance era of fairy tale tropes and musical numbers.
Deadpool is a satire on the comic book genre and it's popularity.

Shrek easily, but Deadpool is solid on its own merits. I grew up watching Shrek as a child and to this day still think it’s genius as a satire.

Deadpool.
They're both very good. After enough qualifiers, Deadpool takes for cake for having some of my favorite kinds of violence and swearing. The vulgarity hits a spot that Shrek has no business being around. Terrific movie but doesn't hit the same receptors hard enough as Deadpool.

Both are pretty meh IMO. I'll say Deadpool, but I barely remember Shrek. I have no interest at this point in seeing either of them again.
