If you were to pare down the MCU to just the "important"/"essential" films, what would you include? Bear in mind, this isn't a list of just your top favorites (my list would look very different), but a list of films most relevant to the overall story that skips the ones that can be excluded.
Here's mine: 1. Iron Man 2. Iron Man 2 3. Thor 4. Captain America: The First Avenger 5. The Avengers 6. Thor: The Dark World 7. Guardians of the Galaxy 8. Captain America: The Winter Soldier 9. Avengers: Age of Ultron 10. Captain America: Civil War 11. Guardians of the Galaxy Vol. 2 12. Thor: Ragnarok 13. Avengers: Infinity War
and likely: 14. Captain Marvel 15. Avengers: Endgame LIST UPDATED BELOW IN THE THREAD
By the time we get to Phase 3, I exclude all origin stories and "first" films: Black Panther and Spider-Man had their intros in Civil War (I include Ant-Man, as well), while Dr. Strange had a fine "introduction" in Ragnarok. The Incredible Hulk had nothing relevant to the future films apart from General Ross. Iron Man 3 is one of my favorites, but Tony's character arc almost contradicts what we see from him later in the series.

Essential for what? You can make the argument only Thor, Iron Man, First Avenger are truly essential because they explain who the Avengers trinity are. Hulk doesn’t technically have a true origin movie.

Easy for me, I've only the blus I truly enjoy/find essential for me...
Iron Man CA: First Avenger The Avengers Guardians of the Galaxy Age of Ultron Ant-Man CA: Civil War Thor Ragnarok Infinity War Endgame
I'm also quite likely to quit collecting MCU titles after 2019, the arc for me is complete.

Avengers - needed to introduce everyone and the team.
CATWS - needed to explain SHIELD'S fall and the relationship between Bucky and Steve which plays a big factor in CW
GotG - needed to introduce the Guardians and their relationship to Thanos and the stones.
AoU - needed to introduce SW and Vision as well as to establish the destruction of Sokovia and why Thor and Hulk are missing.
CW - necessary to introduce extra characters like BP and SM as well as to explain why the Avengers are a broken team.
Ragnarok - needed to explain where Thor and Hulk were during CW as well as a direct tie in to IW. Can also be used to introduce Dr. Strange
IW - biggest event in the MCU

Added Iron Man Three, because of the huge emphasis on Tony at the end and the presence of Harley the Kid in Endgame. Added Ant-Man and the Wasp, because the technology propelled the main Endgame story. Removed Captain Marvel, because she has little impact on the overall story, especially in Endgame.

Apart from the first iron man and thor film which was not Disney, these are pretty much the essentials.

It's hard not to say all of them. Not because they're all equal, but because onscreen they play out like chapters in a book. Same universe, same story, but with rotating sections of perspective like in a book. It's because of their connections the sum total is greater than the sum of their parts. Individually they range from action adventure to political spy drama shit, their own stories within a bigger backdrop. All together it's like one big piece.
Nonetheless, the ones I like that linger the longest are:
Captain America: First Avenger
The Avengers Iron Man 3 Guardians of the Galaxy
Captain America : Winter Soldier
Guardians of the Galaxy 2 Ant-Man
Captain America Civil War Thor: Ragnarok Avengers: Infinity War
All made stronger by the events of other movies happening peripherally to them. Especially in phase 3. In time, maybe it'll be that you had to be there, but at least 3 felt like the same storm clouds were gathering. Then Infinity War happens and it's like a perfect storm.

I'm sorry people don't care about the Fox-Men franchise and hardly anyone talks about that

Disney brought Marvel in 2009, the deal official taking place Dec 31st 2009 6 months after the acquisition was announced, Thor did not start filming until Jan 2010, so Disney owned Marvel before hand and Marvel likely was taking Disney input through 2009 leading up to the acquisition.
Disney simply did not distribute the film, that was Paramount, but that just means that Disney wasn't the one whose connections got the film in theatres or were paying for advertising, all that was on Paramount, Disney still ultimately made the movie and paid for it as the movie was made AFTER the acquisition...just so you know.
