Just about anything in Cinemascope, VistaVision, ToddAO, or other widescreen formats in the 1950's and early 1960's shown at an ornate movie palace.
More specificially:
The Ten Commandments Ben Hur Lawrence of Arabia The Egyptian The Robe The Alamo Strategic Air Command Cleopatra
To name a few...

So many great films from the 1940s. Didn't see them original run BUT did see many from the 40s and earlier on a big screen thanks to a Museum of Modern Art Membership. Saw most of the listed movies in this thread in their Original Runs and some of the older ones on re-release. One advantage of being a tad more Classic than some

2001: A Space Odyssey I would have loved to have seen
Star Wars I did see in its original release!
The Empire Strikes Back I did see in its original release!
King Kong (1933) Couldn't have
Lawrence of Arabia Got to see during a revival of it! Whoa! Nice on the big screen!
Y'know what I missed in Theatres? To my shame? Silence of the Lambs! I would have loved to have seen that in theatres in its initial run! Godfathers 1 and 2 would have been nice too.

I saw most films you guys have listed ,i.e., 2001: A Space Odyssey, Halloween, Star Wars (really long lines for this one), Carrie, Close Encounters of the Third Kind, Godfather and others listed.
My choices are;
The very first film released - The Great Train Robbery (1903).
Charlie Chaplin's first directorial debut - The Kid (1921)
Orson Welles' Citizen Kane
Gone With the Wind
Cleopatra (I was almost 4 months old when released, 1963). My Mom might have taken me to the theater to see this, not sure.

Empire Strikes Back. Would live to see the reaction to the father twist, or the seeming left turn with Leia falling for Han.
Scream and Psycho are other ones. Mostly movies with notable twists.

I second Star Wars and Empire. I wonder what the hype was like back then. It was off the charts, I'll have to tell you about it sometime.
