I usually like a thin crust. But, my favorite local pizzeria has a wonderful garlic and clam topping, and the mix requires olive oil and clam juice, that won't stand up to a thin crust. It seeps through, and gets the crust soggy. That combination is heavenly on a deep dish pizza.

I'm originally from the Chicago area but I was never a fan of deep dish, I prefer a thin crust and no meat on my pizza. Lou Malnati's deep dish vegetable & cheese pizza was good but given a choice, I go for a thin crust.

But oh for a store bought pizza (chilled/frozen) that comes out of the oven crispy all the way through. It just can't be done (thin crust, I'm talking) without burning it to a cinder. Some years ago on a British TV show called Dragons' Den, where inventions by would-be entrepreneurs are pitched to successful business people, a fellow from Liverpool came on with a little invention he had patented as the Magic Pizza. It was just a six inch in diameter aluminium plate with holes in it and raised in the centre, rather like the shape of an upturned saucer. You placed it under your pizza in the centre and it was supposed to distribute the heat from the oven evenly throughout the pizza as it cooked thus ensuring no soggy middle in the cooked pizza. I think there is a US/Canadian equivalent to the show called Shark Tank or something. Anyway he got an investment and his simple product went on to sell out on Amazon and other online outlets. I'm not sure if the product went bust with not enough sales or if they're trying to keep up with demand and are unable to manufacture enough of the things for now. I've tried everything to get an evenly cooked crunchy, non-droop pizza but failed every time. Baking tray, baking shelf, placed on kitchen foil, middle of the oven, top, bottom...nothing works. I've even stuck the pizza under the grill after it's been in the oven, in an attempt to crisp up the middle but it always still droops when you cut a slice. Even pizzas bought from a restaurant droop in the middle. I'd love to try a slice of pizza that I can hold in my hand and it remains perfectly horizontal to the very last mouthful!

I used to make excellent pizzas. The crust was a medium thickness. Everything was prepped by me; from the "sauce" to the caramelized Vidalia onions to the duxelles.
Now I cannot tolerate gluten!
DAMN IT!!!
