I don't think they explained it...
Cable didn't have to go that far back in time. He could have gone back just like 10 minutes, gotten his wife and daughter out of there and waited to ambush FireFist.

But one could argue that he wanted to change the suffering of whole world, not just his own family only.
My plot hole is this one:
When trying to save Deadpools life at the end of the movie why didn't they just remove the power dampening collar he was wearing so his healing power would kick back in? Cable could've saved his last time jump.

It isn't actually part of the story.
