I don't think I'll ever get tired of oatmeal raisin cookies and cheesecake but just wanted some opinions on this.

This goes back several decades, but I love the flavor combination, and it's not too sweet.
I've always known it as "Ice Box Cake." It's simply a stacking of Nabisco chocolate wafers, with whipped cream spread in-between, until you have a stack/column of about 12 inches. Place three/four of the stacks, side-by-side, and cover with more whipped cream. Place in the 'fridge for 3 hours, or so. The wafers become softened, when the absorb the moisture from the whipped cream. Cut on the diagonal, for serving.
Oatmeal and raisin cookies, are great, too.

I don't usually eat dessert at the end of my meals, but I love fresh fruit pies with vanilla ice cream.

I much prefer sweet dishes to be separate from meals ... maybe a treat with a strong cup of coffee. I want to "savor the savory," after a meal, rather than make the abrupt switch to sugar.

Blueberry pie
Peach pie
Apricot kolachki
Prune pachki (fat Tuesday is right around the corner!)
All of the above served with a cuppa good quality black coffee
If I wanna get fancy, nothing beats cherries jubilee served over French vanilla ice cream!

My local Luby's Cafeteria offers a really great Lemon Ice Box Pie, and it is terrific. So tasty.... Not sure how they make it though.

Hmm. It sounds good, but I've never had it. I suppose you could do it with "Lady Fingers", or plain "sugar cookies." Or, Nabisco has a line of cookies that are dusted with powdered sugar, and some no-nonsense lemon crystals (Lemon Coolers?). Those, stacked with a lemon curd ... dunno how to make it ... or, even a lemon-lime marmalade, could do the trick. Stack the cookies with the filling, refrigerate, and OOH! I must be feeling spring coming on.

These my friends are to die for: Add some whipped cream and you are in heaven! Warm apple pie, vanilla ice cream with a caramel topping!

Being a pro baker I could say all the desserts I love to create. But I will say nothing beats the peanut butter pie my bro makes for me & only me for my b-day every year.

Ummmm, does that actually have zucchini in it? Sounds kind of odd to put a veggie in a cake. LOL!
Although, my grandmother used to make a mayonnaise chocolate cake and it was very tasty. Didn't taste like mayo at all but it gave the cake a very moist taste.

Chocolate Zucchini cake
Preheat oven to 350 degrees
1/2 cup Margarine 1/2 cup oil 1 & 3/4 cups sugar 2 large eggs 1 tsp. vanilla Beat these ingredients all together
2 cups grated zucchini....set aside 1/2 cup sour milk......set aside (to sour sweet milk add a tablespoon of vinegar to the milk)
In a large bowl combine 4 tbsp. cocoa 1 tsp. baking soda 1/2 tsp. baking powder 1/2 tsp. cinnamon 1/2 tsp cloves 2&1/2cups all purpose flour
Add dry ingreds to sugar mixture alternatly with milk and zucchini, making about 4 additions each. beat well with each addition. Pour into a greased and floured 9X13 inch baking pan. Over the top of the batter sprinkle 1/2 to 1 cup chocolate chips. Bake 40 to 45 minutes.
This cake is a real crowd pleaser, super for groups, pot lucks or family. It also freezes very well. I cut into serving sized peices and wrap well before freezing. 30 to 40 seconds in the microwave oven defrosts it very well. Of course before giving to a child test to make sure there are no hot spots.

I'm not a fan of red velvet cake so I haven't had Publix but I'm sure its good. I do love their NY cheesecake without the crust, I think its their "organic" cheesecake and doesn't have the graham cracker crust that most cheesecakes seem to have.
