I do like The Last Jedi quite a bit but hard to ignore this - Luke Skywalker, who never gave up believing their was good left in father, almost immediately cuts down his sleeping nephew.

I always ask these questions whenever someone complains about Luke's portrayal in The Last Jedi:
-Why do so many people feel it's impossible for a character to have a change of character or personality at some point in their life? We've seen this happen in real life, for example, with soldiers who went to war and were changed completely by it.
-Why do so many people feel that Luke, even though he's human, can't be impacted by age and/or a profoundly impacting family event like with his nephew?
-Why do people feel that a character in their sixties should behave and act like they did in their twenties?

I had no issues with old man Luke. Mark Hamill gave a very good performance. It just seemed very unlike Luke to not even attempt to save his nephew and just kill him while sleeping. But, at the movie points, he felt immediate regret about it. Still, I think The Last Jedi is the best of the Disney era movies so far.

no he doesn’t You're right. Luke did ignite his saber, but never actually struck at his nephew. He did, however, strike at his dad and even cut his hand off in RotJ. --- By actually acting in character as Superman in Justice League, Cavill's Superman was a bit out of character compared to MoS and BvS. Ron siding with Snape's belittling of Hermione in PoA is famously out of character and a direct opposite of what he does in the book in the same scene.

The famous line by Dumbledore in Harry Potter The goblet of fire
"Harry did you put your name in The goblet of fire!!!!!!"
in the book Dumbledore says this very calmly so it just seemed very out of character and you know the first couple movies Dumbledore seemed so quiet and I guess the actor change really was because of this.

[contrary to the common complaint Luke is being Luke in TLJ. He has always been sulky and prone to jumping to conclusions and needs someone wiser than him to offer guidance. Imo Supes was primarily out of character in BvS. He was nonchalant about the deaths in Metropolis though.

Exactly. Luke Skywalker, the guy who saved his father Darth Vader, who at that point seemed to be irredeemably evil, decides to kill his own nephew, the child of his sister and his best friend, because he saw the dark side in him.
