So here's the thing. I'm hoping to check out Avengers: Infinity War if I get the time and opportunity in the next couple of weeks. Problem is I haven't seen all the films that precede it. The five I haven't seen are as follows:
Thor: The Dark World Ant-Man Avengers: Age of Ultron Captain America: Civil War Doctor Strange Spider-Man: Homecoming
Now I am planning to check out Age of Ultron and Civil War first, but I was thinking of foregoing the others for now.
So what I'm asking here is - Would it be confusing watching Infinity War without having seen Ant-Man, Doctor Strange or Spider-Man: Homecoming? Would I end up feeling out of the loop, so to speak?

Yes. The one that affects it most is probably Civil War but even then its not that big a deal. Infinity War is very much a Thanos story and he's only been briefly shown throughout the mcu until Infinity War.
Edit: Since there were multiple questions i just want to clarify that I don't think you NEED to see all the previous MCU films for IW to make sense. There just may be some small details or characters that you may not recognize immediately.

Ant-Man has no part in this movie, so you’re good on that.
But if you need to know about Spider-Man, Doctor Strange, Scarlett Witch or Vision, you’d might want to watch the films they’re in that precede this first.

I'll echo what others have said, Age of Ultron and Civil War are the most important ones to see first. The others you're probably OK in skipping.

Isn't Spider-Man: Homecoming more or less a standalone movie though? Kind of. It’s a Spider-Man film with connection to MCU. But you should definitely watch Civil War. A lot of stuff would make sense if you see that before IW (ie Scarlett and Vision’s relationship).

It does establish Peter's relationship with Tony, a combination of mentor/pupil and father/son...but otherwise there's nothing that connects it to Infinity War.

Kind of yeah, to be honest. Pretty much all other MCU movies the deal is "yeah it's a good idea to have seen the previous ones but it's not necessary."
Infinity War though is the first one where yeah, to feel the emotional weight of it, it's highly recommended to see the previous ones you mentioned. Thor 2 and Antman not so much though.
But if you don't have time for that at all, just brief Youtube recap videos should so, some do a good job at that.

Yeah Infinity War was easy to follow and I skipped black Panther.

IMO yes, Infinity War CAN absolutely be watched without seeing any other MCU. However, if you MUST see only ONE other movie as a lead in, I would suggest Civil War. That's the movie that sets up why the heroes are divided at the beginning of Infinity War.

Oh yeah. I've no intention of skipping Civil War. My favourite of the trilogy. Now that’s a series that gets continuously better. Really liked the first two myself. The First Avenger is underrated. I liked how they avoided doing the obvious thing with the character and managed to craft a truly three-dimensional and utterly likeable Steve Rogers. They kept him an American patriot without making him a xenophobe and portrayed him as a thoroughly selfless and well-intentioned guy. Better than The Avengers IMO. The Winter Soldier, of course, is excellent.

Everything else is just fluff. I recall the infinity stone from Guardians of the Galaxy. The movie even explained what they were. The Guardians managed to defeat Ronan handily enough all the same, even though he possessed one of them.

However it was never one of my favourites and it just feels left in the dust and doesn’t stand out as much. I hugely disagree that it’s any better than The Avengers, my personal favourite of the MCU.

I enjoy The Avengers as an action film. The Battle of New York is superbly well choreographed, the heroes are all well cast and I love seeing them interact (and feud) with each other. Loki would work better as a supporting villain/side character though. Not a sufficiently imposing main antagonist. And those aliens were just cannon fodder devoid of personality or clear motivation.

If you've seen the first 2 Avengers movies & CA: Civil War which was essentially Avengers 2.5.
