I've just discovered this YouTube series from "America's Test Kitchen's" increasing group of video tutorials. I don't know how long it's been around. Dan Souza is a young math/science geeky-type, who is also a trained chef, with ATK. He presents the math/science part of his lesson, then goes to the kitchen for experiments/demonstrations. He touches on everything from specific foods, to balanced ingredient information, and cooking techniques. (The differences among various salts, and how to make your own sea salt, is below.)
The videos are fairly short ... 4-5 minutes. And, he has a good/subtle sense of humor. America's Test Kitchen is doing wonderfully informative things on YouTube.
