Originally my answer was Batman Returns (1992), but after being reminded that he was in Sleepy Hollow (1999)...that's definitely my answer. It's one of my favourite films, but my memory's not great, so I momentarily forgot that was a film he was in.

The Dead Zone is my favorite.
He first got my attention as "Duane" with this short scene in Annie Hall.

As far as leading roles go, The Dead Zone would be my favorite Christopher Walken movie. For minor roles, my favorite is True Romance. Johnny-Come-Lately I also like At Close Range a lot, that one was an underrated film that never got much attention.

It's kind of a shame that Walken hasn't had more great lead roles considering how talented he is. Generally his best roles have been supporting or bit parts.

the dead zone (1983)
at close range (1986)
king of new york (1990)
biloxi blues (1988) - Walken's unhinged drill sergeant is hilarious.
the comfort of strangers (1990) - another Walken psycho. Befriends an unsuspecting tourist couple in Venice, Italy. Overlooked movie directed by Paul Schrader.
there's the deerhunter as well, of course.
