That's a hard one, every film listed had amazing cinematography.
Tough choice between Ryan's Daughter, Apocalypse Now, and Barry Lyndon. I went with Ryan's Daughter by just a hair.

So many superb picks in this category during the ‘70s (The Towering Inferno sticks out like a sore thumb)…
…but Days of Heaven has to be one of the most beautifully shot colour films in the history of movies. An easy choice even in illustrious competition.
