Chicken cacciatore has all manner of possibilities. I have chicken thighs in the freezer, and the nearby Sunday farmers' market always draws me for veggies and mushrooms.

I'm doing it tonight. I just got back from the Sunday farmers' market, and one of my "indie" produce stores will all of the veggies. I'm torn between mashed potatoes and rice pilaf.

A standard for me and WKD, just Stouffer's meatloaf ( tastes 100% better than my homemade meatloaf) and Bob Evan's mashed potatoes, I use the oven for the meatloaf and the microwave for the mashed potatoes, I don't very much "real" cooking" - tomorrow we're going into Mobile for more of those delicious "Cook Out" cheddar burgers.

We're having Chinese tomorrow (Beef with mushrooms and Chicken with snow peas) and Sunday we're having Chicken Kiev and boiled Yukon Gold potatoes. Tonight is Paul Newman white pizza and Caesar salad.

My nephew's first birthday is this upcoming Saturday, so we're having a family barbecue. Hamburgers, weenies, and steaks abound. First birthday ... ********************** I have some chicken breasts, bone-in/skin-on. I'm going to make a lemon yogurt marinade, and let them marinate overnight. I'm torn between using plain yogurt, and adding the zest and juice, with the garlic and s/p, or using lemon flavored yogurt, and using less lemon. I have both - decisions, decisions.

We had chicken tikka masala with homemade naan last night. I have no ideas for tonight. I'll probably do a frittata, my usual go-to for a lack of inspiration.

Saturday: peanut buttar and jelly on white bread and two toasted pieces of bread wit h butter.
And water.
Sunday: p butter and jelly on white bread and... top ramen . But I only used half of the seasoning packet. So that it's healthy.

Cooked a pork tenderloin this evening. One of my go-tos for lack of inspiration (see above). At least it never goes wrong. I wish I had that much confidence in cooking pork tenderloin. I love it, and it usually comes out right, but I'm always edgy about how long to cook it. Underdone or overdone pork is terrible. If it's OK with you, I'll get one someday soon, and ask your advice on time/temperature suggestions.
