With some unsuspecting adult who grew up unknowingly with cameras on him or her all the time and everywhere he/she went?
I don't think there is the RL technology to make a huge enclosed set with sunrises/sunsets like that.
But I could see it happening if they kept someone isolated somehow and somewhere.

Too expensive. There's an interesting reddit post about this, estimating the cost around $3.5B. This assumes that like in the movie, everyone is watching the program.
