Which genre will he choose? And which genre would you like him to choose? 
He has often spoken about how he would like to do a Bonnie and Clyde style gangster flick. I would be happy with that. I would prefer him to have a go at creating a new Michael Myers/Freddy Krueger style boogie man in the horror genre. I don't think there is much chance of that happening though.

Yeah, a Tarantino horror film could be interesting. I don't really want him to do Star Trek or Kill Bill Vol. 3 if this is really his final film. I'd rather he go out with something that isn't part of a franchise, that stands on its own.

I know he's a big fan of Italian films from the 1960s and 1970s. Maybe he should do a gladiator sword and sandal type film. The Italians pumped out dozens of those things. Most of the directors that later did spaghetti westerns (that QT adores) cut their teeth on those gladiator films in the earlier part of the decade.

I want to see him do something different. He already wrote two Bonnie and Clyde style movies (granted, he didn't direct them), he's done gangsters. I really want to see his Star Trek movie.

I'm not that interested in his Star Trek film, to be honest. I wouldn't mind Kill Bill Vol. 3, but if it's truly going to be his last film, I'd prefer something completely new, maybe a (neo)-noir.
I did hear him say something along the lines of Once Upon a Time... being the "climax" of his films and the next would be "more coda-ish" whatever that means.
