By "met," may I presume you mean more than just an introduction and how-do-you-do or fleeting exchanges? I've had some of those.
But if it's something along the lines of an actual conversation, probably Edward G. Robinson, for his intellect, gentility and artistic sensibilities (if Eddie weren't available, Vincent Price would do for the same reasons). Although she's never been especially a screen favorite of mine, Carole Lombard was by all accounts a gregarious and outrageously fun conversationalist, down-to-earth and at home in any setting and in any company. As an alternate, perhaps Mary Astor, for the candor and thoughtful introspection that came through in her autobiographical books; very interesting woman (and she was a favorite).

Veronica Lake, definitely - if ever there was a fit for that oft-misquoted quote - "a riddle wrapped up in an enigma, within a mystery ..." - I suspect it's her. So many questions still remain, so many details remain in question, and based on what little interactions we have on film, she was relentlessly funny, naturally quirky, deeply inquisitive, quietly intellectual, caustic when needed, incredibly self-deprecating and simply razor-sharp (despite all the bad press).
Martha Vickers, another beguiling mystery.
Vincent Price, that would be tremendous, just to meet the ultimate raconteur.
Laurence Olvier - cruel, jagged and utterly compelling.
Lizabeth Scott, a fascinating performer said to have imbued true grit.

I was going to say Vincent Price but there are so many interviews with him I didn't think it would be as unique as Armstrong. I would ask Martha Vickers why she married Mickey Rooney.
