my daughter and son in law are coming to visit for over a week.
We will be eating out often, but I need suggestions for side dishes to go with:
el Monterey smothered burrito casserole;
ham;
taco salad (maybe I don't need any sides?);
pork roast;
pulled pork sandwiches;
beef roast;
beef enchiladas;
AND
ideas for lunches. My husband and I have very simple lunches like sandwiches, but they go out to eat twice a day.
I appreciate any ideas.
Often I just cook frozen vegies with our main dishes, but you all can probably help me.

PS I am not a chef like some of you. I also have another daughter with health issues. Long complicated recipes won't help me, but thank you all!!

This suggestion is simple and one which you have probably tried before but it's one worth remembering for outstanding taste and simplicity. I had wonderfully tasty roasted rosemary potatoes with a pork roast once. The potatoes were cut in half then cut into mouthful sized bites. Leave the skin on (a thin-skin potato is preferable) Just put the potatoes in a bowl with a little olive oil (about a tablespoon) chopped fresh or dried rosemary (about 1.5 tablespoons) and a good touch of salt (about two teaspoons) Toss it all around and get the potatoes nicely coated with oil and the bits of rosemary. Bake them for about 45 -50 minutes [guide only!]`but make sure they are done well, a nice golden brown, with dark edges and not at all soft in appearance. You want them very crispy. The longer you can leave them in without burning, the better the flavours when they come out. The rosemary really gives the potatoes a sensational taste and in my humble opinion is a perfect accompaniment to your delicious pork roast.

My grandma used to dry her own, but it is fresh in produce or in the spices? thank you!

I think dried rosemary is really just as flavoursome as fresh, as rosemary retains a lot of its oils even when dried and from the jar, and I think you would use about 1 gram of dried for every 2.5 of fresh, so less is needed. Hey, thanks for posting that website. I enjoy looking at sites like this, comparing prices and brands to UK stuff. Yes, those Russet potatoes would do just fine at an amazing price. I wouldn't mind some of that spiral smoked ham! Happy cooking enigma72

Always cheap, too!! there are three or four butchers ! Most stores now buy pre packaged meat so you can't do any special orders. I love this place. I have to drive across town to go there, but it I worth it! thanks again!

Spanish rice and refried beans make a good side to pretty much any Mexican dish. Alternatively, you can do chips and salsa and or queso.
With ham, can't go wrong with corn and mashed potatoes.

Great suggestions, Area51!
For the ham, pork/beef roasts, scalloped potatoes are easy and a good side dish. I like Russet potatoes, but many prefer Yukon Gold.
-- Peel and slice potatoes to about 1/4 inch rounds.
-- In a shallow, buttered baking dish, place a layer of potatoes, and top with salt/pepper, dots of butter, and sprinkling of flour.
-- Repeat layering, with the rest of the potatoes.
-- Add whole milk, until it comes just up to the top layer ... not over.
-- Bake at 425 F, for 15 minutes. Reduce heat to 375, and cook another 45-50 minutes.
You can add cheese, herbs, or whatever you want. I've seen green beans added to the layers.

For easy, and healthy, you can steam or grill almost any vegetable -- by itself, or in a mix of veggies. Most people like veggies with just a bit of butter, and s/p.

Good combination. taco salad (maybe I don't need any sides?); How about a mojito! pork roast; With pork tenderloin I like to serve mashed potatoes, green beans almondine and applesauce. pulled pork sandwiches; Never served this. French fries would be my choice. beef roast; I like to do that in a slow cooker with onions, potatoes and baby carrots cooked in the pot with it. beef enchiladas; I have served an enchilada sampler platter several times. It goes over quite well with guests. Three enchiladas, one beef, one chicken and one cheese and onion on yellow tortillas. I serve chips with guacamole and salsa before the main course. The sides are always refried beans and spanish rice. I hope you find these suggestions useful.

thank you llanwydd the fries are easy and would go well. I also really like the chips and salsa. I had not considered this, but my soninlaw loves that! It would be easy, too. Roast will be what you mentioned. thanks so much!!
