I still hate the fact that they (Elizabeth and Will) weren't treated as pivotal characters in the franchise. I mean, that's so cool about the first movie. We can either root for the scruffy, Jack or the classy Will and Elizabeth.

But they were. The plot of the second movie gets pushed into motion when their wedding gets interrupted. The first half of the third movie is centered around them going on a quest to rescue Jack.
I didn't like the fourth movie because it only focused on Jack, but at the same time I can't blame them for trying to continue a successful franchise despite Bloom and Knightley deciding to move on. I certainly think writing out their characters was preferable to recasting like they did for Mummy 3.
And now the fifth movie returns to their story even though they only have brief scenes, as it focuses on their son.

Maybe I'm biased because I'm totally bonkers about Keira, but I've always viewed the original trilogy as more of Elizabeth's arc than Jack's...he remains basically the same throughout, while Elizabeth goes from being something of a noble to not only a pirate, but the King of Pirates. She's the one who gives the rousing speech to rally the pirate fleet against the Brits, and convinces Barbossa to lead the attack. Again, maybe I'm looking at the whole saga through Keira-colored glasses, but she and Will were definitely treated as pivotal characters.
