What do you call that, does it have a name?
It's called Mexican Chicken and Rice Casserole. It's supposed to have green chilies in it and a couple other things but I changed the recipe. I'm winging it. 
Hope it turns out well, it's still in the oven for now.  Green chilies are always good. Why omit them?

That sounds awesome.
First big meal I made of 2020 was orange chicken, made with almond flour to save a few carbs. Actually pretty good.
