Jaws? In the book he kills the shark but gets caught and dragged down with it Ahab style. In the movie he just falls into the shark's mouth and is given the most slow and painful death you can think of. Poor Quint

He had Brody kill it to subvert our expectations.
The death itself isn't a lot more cruel than Chrissie's, only we see everything. At this point, the shark is no longer an unseen presence like in previous deaths.

Quint's death seems worse than those of the shark's other victims because we see more and Quint puts up a fight.

He wanted the audience to absolutely hate the shark by the time Brody blew it up, so why not have it kill off a character who while gruff and a bit psychotic was also likable and trying to help the town, in the most horrific and gruesome manner possible?

Because it looked cool and so we see Quint faced with his worst fear. Though it was also to make Brody's situation more suspenseful--so the one least capable of dealing with the water situation (though by that time Brody was the least nervous of the three) is the one who deals with it.
But it was also a common thing in the 70s to treat the "working class hero" rather negatively. The movie ending is the David and Goliath theme, the book ending is more like War of the Worlds--the shark is stopped not by anyone's actions per se, but an accumulation of stress or just Nature.

I suppose the impetus behind it was the Ahab symbolism.
By that point in the film, Quint had become obsessed with killing the shark and it'd become his white whale. So you need a more climactic death scene to show his punishment for his hubris and single-mindedness that put them at risk. Also, the entire last part of the film had been about the struggle between them and the shark so the death of Quint had to work as a sort of microcosm of that struggle.
It's more satisfying on a dramatic level than if he'd just gotten dragged off into the water in one bite. I think that would have left people feeling unsatisfied.

Why he didn't just move to Oklahoma after the war is beyond me.
Maybe confronting ones fears is not the way to go?

As I recall from the book, Hooper gets devoured too.  Yes, in fact Brody shoots Hooper in the neck. By accident, while Brody is in the jaws of the shark. I think that's what happened.
