A couple reasons...
1. All the kills in Jaws are brutal, but they remain pretty well hidden. Spielberg escalates and teases with his kill scenes in this movie. He shows you the horrific image of a girl being dragged across the water at dusk, he shows you an explosion of blood around a raft, a few off screen deaths, but at some point he has to show you this shark and how it kills someone in full view. You save that kill for the end.
2. For Brody's arc to work, going from sissy small town sheriff scared of water to hardened shark hunter to work, we had to see Quint completely unmanned. Throughout the movie we're sure Quint is the guy who can take this shark out, but he dies screaming, crying and humiliated. It's nothing personal to the shark, but it's really personal for Brody to watch.

In the original novel, the Richard Dreyfus character dies as well... after having fucked Brody’s wife.That appears like an unnecessary element of Benchley's novel. Glad they eliminated it for the film. Benchley is apparently quoted as saying if he knew more about sharks at the time he wrote it, he wouldn't have written it.
