Matthew McConaughey spent 15 years as a romantic foil in dim romcoms... then showed his mettle as a redneck (the Oscar win) and a critically applauded psycho (KILLER JOE)

The usually amiably bumbling Bill Nighy as an SS officer and the bad brother in Hitler's S.S.: Portrait in Evil (1985). To be fair, it came early in his career and was a role he would probably have turned down once he became a name.  This TV min series was full of off beat casting but the best was Tony Randall as a Joel Gray- ish night club performer.
