I don't care if it is raw as long as it is hot all the way through.

I missed this thread first time round. Resting a steak is for me the trickiest part of getting it done right. Medium is my preference but the resting process, even for a couple of minutes, has foiled me many times as the steak continues to 'cook'. If I take it off the pan just before it looks like its reaching Medium (a little incision with a sharp knife tells me the true state of the meat, no estimating here) it will hopefully reach Medium after resting. But I only let it rest for two minutes so I don't know if I'm getting the full benefit of the resting process. I've read a steak should rest for 5 minutes and no less than 3 but I don't want a steak losing too much of its heat.

Based on the pics:
3-- perfect 4-- why not? 5-- would have to eat some salad with it (I rarely use condiments on meat, especially beef) 2-- only the browned outside 1-- you bring that to the table and no one else will eat either as I would've thrown up on everything

Medium to medium well. I once tried a well done steak and it was a huge mistake because it was so tough to eat. The juices in a medium steak gives it a bit of flavor.
