Don't know exactly how true it is, but it's been said that Bill McKinney really was getting quite frisky with Ned Beatty during the Deliverance rape scene, so much so that crew members had to pry him off Beatty.

Rumor has it that Harvey Keitel came on Nicole Kidman's back during a raunchy sex scene in Eyes Wide Shut and Cruise threatened to quit the movie if Keitel wasn't let go.
