The Zahn/Thrawn novel will probably be the best one. So... save the best for last. Maybe start with Resistance Reborn.

Just finished Resistance Reborn. Thoughts:
Pros:
- It fills in gaps between TLJ and TROS. - While not necessary to understand the film, this story explains in more detail why no one answered the call for help at the battle of Crait at the end of TLJ. - It also partially explains how the Resistance reformed between TLJ and TROS.
Cons:
- No real negatives. This just isn't the most spectacular Star Wars book I've read. Some I can't put down, but not this one. I had long gaps reading this one as it wasn't super engrossing.
If you no longer have any stock in the new canon, there's no use in reading this. But if you'd like to fill in some gaps in the sequel trilogy, it's worth a read.

Just finished The Rise of Skywalker novelization. I have to say, it's the best novelization of the sequel trilogy. It adds a lot to the story, and makes it seem way more interesting that it was when I watched it. I may rewatch the movie again with the new info in mind later this week.
If you absolutely hated the movie, the book won't change your mind. But if you enjoyed the film even if it wasn't the greatest, this book is a must read.
