I most definitely want to see a Lightsaber Fight between Ahsoka Tano and Moff Gideon (with The Darksaber) in Season 2 of "THE MANDALORIAN".
What about everybody else here ?

Kind of but also maybe not, if Moff Gideon isn't a force user I don't see how he hangs with Ahsoka, she handed two inquisitors their arse when Kanan could barely hold his own with a single one of them, mando's can hold their own a little with Jedi but that's only with vast amounts of gadgets to help out, and even then as Kanan told Sabine those tricks will only save them from time to time, only training and discipline win out in the long run, Ahsoka is an extremely gifted force user who is battle tested amongst other force wielders, so doubt it should be too much a problem for her to take on Gideon unless the handicap her in someway, or make Gideon a former Inquisitor in his own right.

You know, I think (and I do realize that this is a pretty "out there" idea) that the reason why Moff Gideon actually wants Baby Yoda is because he wants to extract some of the Midi-chlorians that he has in him and then inject them into himself and give himself the force.

I get the idea though I don't think that itself works, all life has Midi-chlorians in them, every person as a different amount, those sensitive to the force however simply have a higher concentration, so Gideon could just extract them from 100's or 1000's of people by force to do that.
My guess for that idea would be he wants to figure out how that species is so force sensitive, all members are supposedly force sensitive so their must be a biological reason why, and that he may wish to replicate which explains why he needs one of their kind specifically.
