for it but their career didn't improve.
Peter Weller (Robocop)
Bonus points if they ended up returning:
Michael Dudikoff (American Ninja) Casper Van Dien (Starship Troopers) Hugh Jackman (X-Men)
And directors
Brian Singer (X-Men)

Well Terence Howard left Iron Man after finding out he would take a pay cut for the sequels (apparentley he was the highest paid in the 1st film). Seeing how much money the subsequent Iron Man films, Avengers Ultron and Civil War made, seems to be a (financially) dumb move.

When did Jackman leave X-Men? After X-Men: The Last Stand. Cameos don't count.

When did Jackman leave X-Men? like.....2 months ago? Seeing as how that wasn't a case of an actor leaving because they thought they were too good, nor has he returned to the franchise yet which the OP specifically listed him as doing, I somehow don't think that's what the OP was referring to.

Leonard Nimoy wanted out of being Spock,
which was why they killed him off
He ended up coming back for 29 more years

Harrison Ford famously wanted Han Solo to die in 1983,
but ended up playing him again 32 years later

He's been in every XMen movie outside of First Class plus 3 movies as Wolverine.
Plus his career arguably did improve.
EDIT: I haven't seen Apocalypse so not sure if he's in that one.

He has a cameo in First Class but that's the point. A lead role was there for him in a fourth X-Men film but he didn't want it. Once First Class had success and there was shown to be life in the franchise he was interested again. And his career had some flops like the Peter Pan film but he keeps returning to X-films.

After X-Men: The Last Stand. Cameos don't count. ? didn't he do origins right after? Yeah he did Origins but in that he's not just the lead but the headliner. The studios would have done another X-Men if he wanted it but he saw the attraction in his character being the sole focus. Also he had creative input and he made dodgy decisions but I digress. Maybe Hugh and the X-Men isn't the best example.

I disagree with this in the sense that the delay in another XMen movie had anything to do with Jackman who was already committed to the Wolverine movies.
First Class changed the trajectory of where the XMen movies were going and he was clearly the headlining in Days of Future Past, a movie that looked great but made little sense because of their focus on him & JLaw.

The first Wolverine solo film was conceived in part because Hugh Jackman wanted a solo film. As I said, the studios first choice would have been a fourth X-Men film. Hugh wanted the solo venture. First Class was made out of one of the few avenues they had left after Last Stand, the past. This would explain Wolverine's absence (with the exception of a very brief cameo).

I would agree with him wanting a solo film, but I think people forget how disastrous a reception Last Stand got. It ended the trilogy on a low note and Fox wasn't sure how to set up another one. So they were in no rush to return to that.
Origins & First Class bought them the time to figure that out and ensure that their 2 superstars plus Fassbinder made it too.

Hugh had the keys to the city and set the pace at that time. No matter the critical reception of Last Stand, it was still a financial success and I am certain the studio would have preferred an X-Men 4 to Origins and First Class. Hugh isn't necessarily someone who goes with the flow, especially at the time. He was against an R rating for Origins and got what he wanted. I think he made other decisions including casting. He thought that his solo films would be as successful as the X-Men films.
